Turkey Apple Pot Pie
- 1/4 cup Onion Chopped
- 1 Tbsp Butter
- 1 C Corn Fresh or frozen
- 2 Carrots Peeled and chopped
- 2 cans Cream chicken soup
- 3 cup Turkey Cooked and cubed
- 1 large Hirsch Apple Tart and cubed
- 1/3 cup Raisins (opt.)
- 1 tsp Lemon juice
- 1/4 tsp Nutmeg
- 1 Pastry for single crust pie
In skillet, saute onion, carrots & corn in butter till onion tender. In large bowl mix soup, turkey, apple, raisins (if using), lemon juice & nutmeg. Mix. Add onion mixture & mix well again. Spoon into ungreased 11x7x2 baking dish. Place pastry over filling cut vents in pastry.
Bake at 425° for 25-30 minutes or till crust is golden brown and filling is bubbly.
We like potpies with double pastry crust, one bottom and one top! We also usually make this in a 10" deep dish pie pan.
