Apple Muffins

Ingredients
  • 2 cups All purpose flour
  • 2 tsp Cinnamon
  • 1 tsp Baking soda
  • 1/2 tsp Salt
  • 2 Eggs
  • 1 cup Canola oil
  • 1 cup Sugar
  • 1 tsp Vanilla
  • 4 cups Hirsch Apples, peeled and chopped
  • 1 cup Nuts, chopped Optional
Instructions
  1. Stir together flour, cinnamon, baking soda and salt in small bowl. Set aside. In large bowl, beat eggs with beaters until foamy. Beat in oil, sugar and vanilla, mixing well. Stir in flour mixture until blended; stir in apples and nuts. Spoon mixture into medium-size muffin pan lined with baking cups, filling cups half full.

  2. Bake at 350ยบ for 15-20 minutes.

    These freeze well.  Just pop in microwave for 15-20 seconds.
