Turkey Apple Pot Pie

Ingredients
  • 1/4 cup Onion Chopped
  • 1 Tbsp Butter
  • 1 C Corn Fresh or frozen
  • 2 Carrots Peeled and chopped
  • 2 cans Cream chicken soup
  • 3 cup Turkey Cooked and cubed
  • 1 large Hirsch Apple Tart and cubed
  • 1/3 cup Raisins (opt.)
  • 1 tsp Lemon juice
  • 1/4 tsp Nutmeg
  • 1 Pastry for single crust pie
Instructions
  1. In skillet, saute onion, carrots & corn in butter till onion tender. In large bowl mix soup, turkey, apple, raisins (if using), lemon juice & nutmeg. Mix. Add onion mixture & mix well again. Spoon into ungreased 11x7x2 baking dish. Place pastry over filling cut vents in pastry.

  2. Bake at 425° for 25-30 minutes or till crust is golden brown and filling is bubbly.

Recipe Notes

We like potpies with double pastry crust, one bottom and one top!  We also usually make this in a 10" deep dish pie pan.
