Apple Muffins

Ingredients
2 cups
all purpose flour
2
teaspoons cinnamon
1
teaspoon baking soda
1/2
teaspoon salt
2
eggs
1
cup canola oil
1
cup sugar
1
teaspoon vanilla
4
cups apples, peeled and chopped
1
cup chopped nuts, optional
Directions
Stir
together flour, cinnamon, baking soda and salt in small bowl. Set aside.
In large bowl, beat eggs with beaters until foamy. Beat in oil, sugar and
vanilla, mixing well. Stir in flour mixture until blended; stir in apples
and nuts. Spoon mixture into medium-size muffin pan lined with baking cups.
Fill cups half full. Bake at 350F for 15 to 20 minutes.
Makes 12 muffins.
